1/4 cup fat free margarine
2 Tbsp lemon pepper
1 large potato, cut lengthwise into fourths
1 medium zucchini cut lengthwise in half
1 medium yellow squash cut lengthwise in half
2 large bell peppers, cut lengthwise into fourths and seeded
1 medium onion, cut into 1/2" slices
1/4 cup fat free Italian dressing
Heat coals or grill for direct heat. Mix margarine and lemon pepper. Brush on veggies.
Cover and grill 4 to 6 inches from medium heat for 20 minutes, turning frequently, until tender.
As veggies become done, remove from grill and spinkle with italian dressing. Serve warm.
